This recipe is one that I book marked the very evening I bought the book- I personally adore jam on pretty much anything! Any and every type but unfortunately I usually end up feeling guilty because of the huge amount of sugar added to preserve it. You know this recipe was easy to make because I made it and got it right first time!
The recipe only calls for 3 ingredients, unlike many of her recipes it doesn’t call for any fancy ingredients or equipment. You will need Strawberries (or any other kind of fruit), honey (I used manuka for extra goodness) and chia seeds to bulk it up a little.. and a few jam jars of course.
Heat the honey and strawberries in a saucepan for a minute or two then squash with a potato masher until smooth, add in chia seeds and leave to simmer for 5-10 minutes, adding fruit or honey to taste.
I had mine warm with some bread and it was divine!
