I know that its winter, there is hail outside and the customary British weather warning have been issued but one of my housemates cooked this up and it looked so good I had to share it, as the perfect anti-winter healthy pick me up! It’s so colourful you can almost pretend you’re on holiday somewhere warm…almost.
To make it she used lettuce,peppers,sweetcorn, cucumber,apple, tomato,spring onion, and red onion. It keeps for about 5 days in a fridge, she recommends serving it with Balsamic vinegar or honey and mustard.
She’s finding Veganism so much easier than I am but this was a nice little reminder than it’s actually quite nice to still make the summer foods in the winter, if only to fight the temptation for a BBQ!
